The latest craze seems to be sticking a Rolo candy in a cookie. I like cookies and Rolos. I thought I’d give it a go, too, with Snickerdoodle Rolo Cookies.
I have yet to stumble upon this combination on Pinterest, and I was feeling experimental.
I have always liked a crisp Snickerdoodle, and thought the surprise of the Rolo would be fun.
I used Better Homes and Garden’s Snickerdoodle recipe since it is the one I have used for years, except I never chill my dough. I’m a little impatient with things like that, and have not suffered for it with Snickerdoodles. I bought mini Rolos, and placed one inside a bit of dough before rolling it into a ball.
I rolled each ball in cinnamon and sugar, just as you would a plain Snickerdoodle, before baking at 375 degrees for about 10 minutes.
Cool the cookies on a wire rack and serve.
These cookies are a quick and easy fix.
