Hi everyone!
When Kim asked if I’d be down for guest posting while she was away, I was super excited to fill in for her for the day!
So, I figured I’d share a recipe with you Internet land. And since Kim and I share a birthday, it seems fitting to share my favorite cake recipe: poppy seed cake!
I grew up loving this cake! My mom typically made it for various celebrations either in mini-loaf, loaf, muffin, or mini-muffin form, but for something as auspicious as birthday it really deserves to be baked up in a bundt pan!
This cake is an amazing balance of light and crumbly and sweet and always has that amazing sticky-ish layer on top that you just want to pick off, but try to not do…
Honestly, this cake stands alone. No need to frost, or glaze, or futz with it. Just bake and enjoy!
Poppy Seed Cake
4 eggs
1 cup oil*
3 cups light brown sugar, packed
3 cups flour**
1 tsp salt
1 tsp baking soda
1 tsp baking powder
1 cup milk ***
2 tsp vanilla
1 2 ounce package of poppy seeds
Preheat oven to 300º. Mix ingredients in order listed. Pour batter into greased pans (bundt, loaf, etc)
Baking time varies by pan. Loaf pans avg about an hour. Bundt can take close to 90 minutes. Really key to not over bake it or you will be deprived of the amazing gooey “crust” that forms.

* I know use apple sauce and it works (and cuts down on the guilt!)
** I use a gluten free baking mix – either Orgran or Gluten Free Pantry
*** I use rice milk, but dairy milk works of course!
