Now that school is back in session, I have really renewed my passion for cooking once again. I have always loved to cook, but somehow summer gets me side-tracked with meal plans and the desire to spend much time in the kitchen. It’s kind of a summer curse where not only is it usually too hot to cook, but schlepping kids to various summer fun leaves little time to care. We end up eating out more than usual, and never really all that satisfied.
Summer’s end is a cooking revival. I have made a huge effort to meal plan and break out of the rut of our ordinary meals, which are great meals . However, I enjoy finding new favorites to keep things fresh here. Of course I turned to Pinterest to lead me to the bloggy promise land. I’m always looking for savory Pins, as savory is the food I most enjoy. I’m a dinner girl. It’s the event that I most look forward to each day. I love gathering around the table to enjoy the company of family and a great meal. We are still working on some of the manners of the company, but we are making strides.
One thing I highly value is teaching my kids to eat and enjoy quality food. Just as readers are born in the lap of a parent, I also believe good eaters are born from the home kitchen. This is not always an easy task, but it is worth the effort. There will always be those nights where I cry, “Chinese Take-Out!”
Tonight I made Italian Drunken Noodles, and it was fabulous. I served this with crusty sea salt and rosemary bread, plus a glass of Merlot. Heaven. Pappardelle noodles are a little tricky to find, but they are the perfect noodle for the dish.
This Beef Stroganoff is the best quick stroganoff I have made. I’ve tried a lot of stroganoff recipes, but I’m usually left underwhelmed. The leftovers made a great lunch.
I loved these Swedish Meatballs! I serve with a green veggie, garlic mashed potatoes and a glass of Merlot for the adults.
And my absolute favorite…And I’m giving this 5 stars… Italian Chicken. This meal was incredible. I did not use artichokes because I did not have them. I kept saying that this meal was restaurant quality, but better because it tasted so fresh. It was flavorful, but light. I don’t think my husband said much more than “mmmm” the entire meal. We served this over spaghetti noodles, and with good crusty bread. Make sure you top it with juices from the baking dish. This would be an awesome stay in date night meal.
